Method

  1. 1

Warm your ready made arroz rojo (see the base recipe) and your ready made frijoles negros (see the base recipe) in separate pans until steaming hot. Mash about half the beans.

  2. 2

Warm the flour tortillas for 15 seconds per side in a dry pan so they bend without cracking.

  3. 3

On each tortilla, spoon a strip of rice and beans down the centre, then the cheese, avocado, coriander and a squeeze of lime. Keep the filling to about 2 tablespoons of each.

  4. 4

Fold in the two sides, then roll up tightly from the bottom.

  5. 5

Heat the oil in the pan and sear the burritos seam side down for 2 minutes, then turn and cook for 2 minutes more until golden.

    4 min
  6. 6

Rest for 2 minutes and serve halved.

Tips

  • Warm tortillas are flexible. Cold ones tear when you roll them.
  • Mashing half the beans makes the filling hold together instead of rolling out.
  • Searing seam side down seals the burrito so it stays shut.

Storing and freezing

Wrap cooled burritos and keep in the fridge for up to 3 days. Freeze for up to 3 months and reheat until steaming hot all the way through. Reheat rice only once.

Questions

Are burritos really Mexican?

Yes. They come from northern Mexico, around Sonora and Chihuahua, where flour tortillas are the staple. The giant versions are more Tex Mex.

Can I make them dairy free?

Yes. Leave out the cheese and add a little more avocado and salsa. The flour tortillas, rice and beans have no dairy.

Can I freeze them?

Yes. Wrap each tightly and freeze. Defrost in the fridge overnight, then heat in a pan or oven until piping hot all the way through.
