Method
- 1
Heat the oven to 240°C (220°C fan) with a baking tray inside to heat up. Wilt the spinach in a hot pan with the garlic and oil for 2 minutes, then squeeze dry and chop.
2 min - 2
Mix the spinach, chicken, mozzarella and 4 tablespoons of your ready made basic tomato sauce (see the base recipe). Season with pepper.
- 3
Divide your ready made pizza dough (see the base recipe) into 4 balls. Roll each on a floured surface into a 22 cm circle.
- 4
Spoon the filling over one half of each circle, leaving a 2 cm border. Fold over and crimp the edges firmly to seal. Prick the top twice.
- 5
Slide the calzoni onto the hot tray dusted with semolina. Bake for 14 to 16 minutes until puffed and deep golden.
15 min - 6
Warm the remaining tomato sauce and serve it in a bowl for dipping.
Tips
- Squeeze the spinach really dry or the steam will make the dough soggy from inside.
- Do not overfill. A seam that bursts leaks the cheese onto the tray.
- Brush the tops with a little olive oil for a shiny, crisper crust.
Storing and freezing
Eat warm. Cool leftovers within 1 hour and keep in the fridge for up to 2 days; reheat in the oven until steaming hot all the way through.
Questions
Can I use shop bought dough?
Yes. About 500 g ready made pizza dough works well. Use your own base recipe for a vegan, dairy free crust.
Why did my calzone burst?
Too much filling or an unsealed edge. Leave a clear 2 cm border, press hard, and prick the top so steam can escape.
Can I freeze them?
Yes. Freeze baked and cooled calzoni for up to 2 months and reheat from frozen at 180C (160C fan) for about 20 minutes, until hot all the way through.
