Method
- 1
Heat the oven to 220°C (200°C fan) and line two baking trays with baking paper.
- 2
Whisk the flour, soya milk, garlic granules, smoked paprika and salt into a smooth, thick batter.
- 3
Toss the cauliflower florets in the batter until well coated, then lay them on the trays in a single layer, spaced apart.
- 4
Bake for 25 minutes, turning halfway, until the batter is crisp and golden.
25 min - 5
Warm your ready made BBQ sauce (see the base recipe) in a pan for 3 minutes, then toss the hot florets in it until coated.
3 min - 6
Return to the trays and bake for 10 to 12 minutes more, until sticky and glossy.
11 min - 7
Serve hot with celery sticks.
Tips
- Spread the florets out well on the trays. If they touch they steam and the coating goes soft.
- Let excess batter drip off each floret before baking, or the coating will be thick and gummy.
- Serve with a vegan mayo and a squeeze of lemon as a dip.
Storing and freezing
Best eaten fresh. Leftovers keep 2 days in the fridge and reheat in a hot oven for 10 minutes, though they will be less crisp.
