Method
- 1
Heat the oven to 200°C (180°C fan). Scrub the potatoes, prick them all over with a fork and rub with a little oil and salt. Bake directly on the oven shelf for 1 hour, until the skin is crisp and the middle is soft.
60 min - 2
About 15 minutes before they are ready, heat the oil in a large frying pan over a medium high heat. Fry the chicken for 6 minutes until golden.
6 min - 3
Add the pepper and sweetcorn and cook for 4 minutes more.
4 min - 4
Pour in your ready made BBQ sauce (see the base recipe) and simmer for 4 minutes, until thick and the chicken is cooked through, with no pink inside.
4 min - 5
Split the hot potatoes open and fluff the insides with a fork. Spoon over the BBQ chicken and scatter with cheddar.
- 6
Return to the oven for 5 minutes to melt the cheese, then top with spring onions and serve.

Tips
- Bake the potatoes straight on the oven shelf for the crispest skin. Wrapping in foil steams them and makes the skin soft.
- Use chicken thighs instead of breast for a juicier filling.
- Make a dairy free version by skipping the cheese or using a dairy free cheddar style cheese.
Storing and freezing
Keeps 2 days in the fridge; store the filling and potatoes separately. Reheat the chicken until steaming hot all the way through before serving.
Questions
Can I cook the potatoes in the microwave?
Yes. Microwave for 8 to 10 minutes, turning halfway, then crisp the skins in a hot oven for 10 minutes. The skin will not be quite as crisp as the all oven method.
Can I use leftover roast chicken?
Yes. Use about 300 g of shredded cooked chicken. Warm it in the sauce for 3 to 4 minutes until piping hot.
Can I prepare the filling ahead?
Yes. Make it up to 2 days ahead, chill it quickly, and reheat in a pan until steaming hot all the way through while the potatoes bake.
