Method

  1. 1

Rub the 100 g butter into the first 200 g flour, stir in the egg yolk and water to make a dough. Wrap and chill for 30 minutes.

  2. 2

Heat the oven to 190°C (170°C fan). Roll out the pastry and line a 23 cm pie dish.

  3. 3

For the crumbs, rub the 60 g butter into the 150 g flour, sugar, cinnamon and ginger until sandy.

  4. 4

Stir the black treacle, golden syrup and egg together. Dissolve the bicarbonate in the boiling water and stir that in. It will foam.

  5. 5

Pour the liquid into the pastry case. Scatter the crumbs over the top without pressing.

  6. 6

Bake for 15 minutes, then turn down to 170°C (150°C fan) and bake for 25 to 30 minutes more, until the crumb is set and the filling does not slosh.

    45 min
  7. 7

Cool fully before cutting. The base stays soft and sticky.
