Method
- 1
Heat the oil in a large pan over a medium high heat. Brown the chicken for 6 minutes, then add the onion and cook for 5 minutes.
11 min - 2
Stir in the flour for 1 minute, then add the stock and your ready made BBQ sauce (see the base recipe). Simmer for 12 minutes until thick, then stir in the sweetcorn. Cool completely.
12 min - 3
Heat the oven to 200°C (180°C fan) with a baking tray inside. Roll out two thirds of your ready made shortcrust pastry (see the base recipe) and line a 22 cm pie dish.
- 4
Fill with the cooled chicken mixture. Roll out the remaining pastry for a lid, dampen the edge, press together and crimp. Cut a steam hole and brush with egg.
- 5
Bake on the hot tray for 40 minutes, until deep golden and the filling is steaming hot all the way through.
40 min - 6
Rest for 10 minutes before cutting.
Tips
- Cool the filling fully before adding the pastry lid, or the pastry will turn soft and greasy.
- Baking on a hot tray helps crisp the base of the pie.
- Chill the lined dish for 15 minutes before filling to reduce shrinking.
Storing and freezing
Keeps 3 days in the fridge, cooled within 2 hours. Freeze slices for up to 3 months and reheat until steaming hot all the way through.
Questions
Can I use shop bought pastry?
Yes. Use 400 g ready made shortcrust, or puff pastry for a lid only pie. Follow the pack for baking temperatures.
Can I use leftover roast chicken?
Yes. Use 500 g cooked chicken, add it with the sweetcorn and simmer for just 5 minutes to thicken the sauce.
Can I make it dairy free?
Check your pastry. Make it with a dairy free spread or use a dairy free ready made shortcrust. The filling is dairy free.
