Method
- 1
Mix the flour, yeast, sugar and salt in a large bowl. Add the warm milk, yolks, melted butter, orange zest and vanilla.
- 2
Knead for 12 minutes, by hand or in a mixer, until the dough is smooth, soft and shiny. It will be sticky. Work in the raisins. Cover and leave somewhere warm for 1 hour 15, until doubled.
75 min - 3
Grease a 23 cm bundt or tall ring tin well with butter. Knock the air out of the dough, shape into a ring and press it into the tin.
- 4
Cover and prove for 45 minutes, until the dough almost reaches the top of the tin.
45 min - 5
Heat the oven to 180°C (160°C fan). Bake for 40 to 45 minutes. Cover loosely with foil after 25 minutes if the top is browning too fast. A skewer should come out clean.
42 min - 6
Cool in the tin for 10 minutes, then turn out. Mix the icing sugar and lemon juice into a thick glaze and spoon over the cold cake.
