Method
- 1
Heat the oil in a deep, wide frying pan with a lid over a high heat. Brown the beef for 6 minutes, breaking it up. Add the onion and garlic and cook for 4 minutes.
10 min - 2
Stir in the taco seasoning mix and rice and cook for 1 minute so the grains are coated.
- 3
Pour in the passata and hot stock. Bring to the boil, then cover, reduce the heat to low and cook for 12 minutes without lifting the lid.
12 min - 4
Stir in your ready made Mexican black beans (see the base recipe) and the sweetcorn. Cover again for 5 minutes until the rice is tender and all the liquid is absorbed.
5 min - 5
Take off the heat and leave covered for 5 minutes. Fluff with a fork, taste and add salt if needed. Top with your ready made pickled red onions (see the base recipe) and the coriander and serve.

Tips
- Keep the lid on while the rice cooks. Lifting it lets out the steam rice needs.
- Measure the rice and liquid carefully, about 1 part rice to 2.5 parts liquid in total including the passata.
- Add a splash of hot water if the rice is still firm but the pan is dry.
- Rinse the rice first if you like a fluffier, less sticky result.
Storing and freezing
Cool quickly, within 1 hour if possible, and keep in the fridge for up to 1 day. Reheat only once until steaming hot all the way through. Do not freeze cooked rice dishes.
Questions
Is it safe to reheat rice?
Yes, if you cool it quickly, chill within an hour, keep it in the fridge no more than 1 day and reheat it once until it is steaming hot all the way through.
Can I use brown rice?
Yes, but it needs about 30 minutes and extra stock. Add 150 ml more stock and cook covered until tender.
Is it gluten free and dairy free?
Yes. Beef, rice, beans, vegetables and spices contain no gluten or dairy. Use a gluten free stock and check labels on passata and sweetcorn.
