Method

  1. 1

Heat the oven to 220°C (200°C fan). Toss the cauliflower florets in a large bowl with 100 ml of your ready made pollo asado marinade (see the base recipe) and the oil.

  2. 2

Spread the florets over two large baking trays in a single layer so they roast rather than steam.

  3. 3

Roast for 25 to 30 minutes, turning once, until deeply golden with charred edges and a knife slides in easily.

  4. 4

Warm your ready made corn tortillas (see the base recipe) in a dry pan for 30 seconds per side and keep them in a clean tea towel.

  5. 5

Fill each tortilla with cauliflower and avocado, then top with your ready made pickled red onions (see the base recipe) and coriander.

  6. 6

Serve with lime wedges to squeeze over.

Tips

  • Cut the florets all the same size, about 3 cm, so they roast evenly.
  • The marinade is salty, so taste a floret before adding any extra salt.
  • Add a spoonful of refried beans under the cauliflower for a heartier taco.

Storing and freezing

Keeps in the fridge for up to 3 days. Reheat on a tray at 200C for 10 minutes, or until steaming hot. Cauliflower is best fresh from the oven.

Questions

Is this really vegan?

Can I cook this in an air fryer?

Yes. Air fry at 200C for 15 to 18 minutes, shaking halfway, until charred at the edges.
