Method
- 1
Coat the pork steaks in your ready made al pastor marinade (see the base recipe). Cover and chill for at least 2 hours, or overnight.
- 2
Heat the oven to 220°C (200°C fan). Toss the onion wedges and pineapple with the oil on a large baking tray.
- 3
Lay the pork on the tray, leaving gaps between the pieces. Roast for 25 to 30 minutes, turning everything once, until the pork is charred at the edges and cooked through with no pink in the middle.
27 min 30 s - 4
Rest the pork on a board for 5 minutes, then slice across the grain.
5 min - 5
Warm your ready made refried beans (see the base recipe) in a small pan with the water, stirring, until steaming hot all the way through.
4 min - 6
Serve the pork with the roasted pineapple and onion, beans, pickled red onions (see the base recipe), coriander and lime.
Tips
- Pork shoulder steaks stay juicy in a hot oven. Lean loin dries out quickly at this temperature.
- Spread everything in a single layer. A crowded tray steams instead of charring.
- Turn the pineapple once so it picks up deep brown edges. That sweet char is the point of al pastor.
- Slice the pork thin across the grain and serve with warm corn tortillas for a quick taco night.
Storing and freezing
Cool within 1 to 2 hours and keep the pork in the fridge for up to 3 days. Reheat until steaming hot all the way through. The beans keep for up to 4 days.
Questions
Is this the same as tacos al pastor?
It uses the same marinade and the pineapple, but cooked in the oven instead of on a vertical spit. It is a convenient home version with the same flavours.
Can I use chicken?
Yes. Chicken thighs work well. Roast for 25 to 30 minutes until cooked through with clear juices and no pink.
How long can I marinate the pork?
From 2 hours to overnight. The pineapple in the marinade tenderises meat, so do not leave it much longer than 24 hours or the texture turns soft.
