Method
- 1
Toast the sourdough slices until golden and crisp.
- 2
Heat the olive oil in a large non-stick frying pan over a medium-high heat until it shimmers.
- 3
Crack in the eggs and fry for 2 to 3 minutes, spooning a little hot oil over the whites, until the edges are lacy and crisp and the whites are fully set with a runny yolk. Cook a little longer if you prefer a firm yolk.
2 min 30 s - 4
Loosen your ready made tahini sauce (see the base recipe) with the lemon juice and a splash of cold water.
- 5
Lay the tomato slices on the toast, sprinkle with salt, then spread or drizzle over some tahini sauce.
- 6
Slide the eggs on top, scatter with za'atar and parsley and add another drizzle of tahini sauce.
Tips
- Use ripe tomatoes and salt them as they are sliced. They need little else.
- Hot oil is the secret to lacy edges. Wait until it shimmers before adding the eggs.
- Vulnerable groups and pregnant women should cook the eggs until the yolk is firm.
Storing and freezing
Best eaten straight away, so cook only what you will eat. Leftover tahini sauce keeps in a covered container in the fridge for up to 4 days.
Questions
What is za'atar?
Za'atar is a Middle Eastern blend of dried thyme or oregano, sesame seeds, sumac and salt. Look in the herbs and spices aisle or world foods section and check the label if you avoid gluten.
Can I make this dairy free and egg free?
It is dairy free already. For egg free, replace the eggs with sautéed mushrooms or roasted chickpeas and keep the za'atar and tahini sauce.
