Method

  1. 1

Cook the soba noodles in a large pan of boiling water following the packet, usually 4 to 5 minutes. Add the edamame for the last 2 minutes.

    5 min
  2. 2

Drain and rinse under cold running water until completely cool, rubbing gently to remove the starch so the noodles do not clump.

  3. 3

In a large bowl, whisk your ready made tahini sauce (see the base recipe) with the tamari, rice vinegar and sesame oil, adding cold water a splash at a time until it is a thick pourable dressing.

  4. 4

Toss the noodles, edamame, cucumber, carrots and most of the spring onion in the dressing until evenly coated.

  5. 5

Toast the sesame seeds in a dry pan for 1 to 2 minutes until golden.

  6. 6

Serve topped with the sesame seeds, remaining spring onion and chilli flakes.

Tips

  • Check the soba packet. Many contain wheat, so choose one made from 100% buckwheat and labelled gluten free.
  • Rinse the noodles well under cold water. This stops them clumping and keeps the salad light.
  • Add shredded cooked chicken, prawns or marinated tofu for extra protein.

Storing and freezing

Keep in a covered container in the fridge for up to 2 days. The noodles absorb the dressing, so loosen with a splash of cold water before serving. Not suitable for freezing.

Questions

Is soba naturally gluten free?

Not always. Traditional soba often includes wheat flour. Choose a pack labelled gluten free, made from 100% buckwheat, or use rice noodles instead.

Can I serve this warm?

Yes. Toss the freshly cooked noodles with the dressing while still warm, but the vegetables will not be as crisp. Cold is the traditional style.
