Method

  1. 1

Heat the oven to 220°C (200°C fan). Toss the aubergine with the olive oil, cumin and a pinch of salt on a large tray. Roast for 25 minutes, adding the tomatoes for the last 10 minutes, until soft and golden. Lower the oven to 180°C (160°C fan).

    25 min
  2. 2

Meanwhile, roll out your ready made shortcrust pastry (see the base recipe) and line a 25 cm loose bottomed tart tin. Chill for 20 minutes, then blind bake at 200°C (180°C fan) with paper and beans for 15 minutes. Remove them and bake for 5 minutes more.

  3. 3

Arrange the aubergine and tomatoes in the case and scatter over the feta.

  4. 4

Whisk the eggs, cream and 2 tablespoons of your ready made tahini sauce (see the base recipe) together, season with pepper and pour into the case.

  5. 5

Bake at 180°C (160°C fan) for 25 to 30 minutes until set.

  6. 6

Serve warm, drizzled with the rest of the tahini sauce and scattered with mint and sesame seeds.

Tips

  • Roast the aubergine until deeply coloured, as undercooked aubergine is spongy and bitter.
  • Do not salt the aubergine before roasting if using feta, as the tart will become too salty.
  • Pomegranate seeds scattered on top add a fresh, sharp contrast.

Storing and freezing

Cool within 2 hours and keep in the fridge for up to 3 days. Serve cold or reheat slices at 160C (fan 140C) for 12 minutes. Keep the tahini sauce in a separate pot. Not suitable for freezing.

Questions

Is this nut free?

Tahini is made from sesame seeds, not nuts, so the recipe contains no nuts. Sesame is a major allergen, so avoid it for anyone with a sesame allergy.

Can I use tinned aubergine or baba ganoush?

No, roast fresh aubergine for the best flavour and texture.

Can I make it vegan?

Use dairy free baking block in the pastry. Replace the eggs and cream with a batter of 100 g chickpea flour whisked with 250 ml plant milk.
