Method
- 1
Whisk 2 tsp agar into the 350 ml water in a pan and leave for 5 minutes. Add 60 g sugar and the pandan extract. Bring to the boil over a medium heat, whisking, and simmer for 2 minutes until the agar has completely dissolved.
2 min - 2
Pour into a 20 cm square dish or tin. Leave 15 minutes at room temperature until it has just set on top.
15 min - 3
Meanwhile make the white layer. Whisk 2 tsp agar into the 60 ml water in a clean pan and leave 5 minutes. Add the coconut milk, 60 g sugar and salt.
- 4
Bring to the boil, whisking, and simmer for 2 minutes. Cool in the pan for 3 minutes, so it is warm and not boiling.
3 min - 5
Gently pour the white mixture over the set green jelly, pouring against a spoon so it does not make a hole.
- 6
Leave to set at room temperature, then chill for an hour. Cut into squares or diamonds and serve cold.
