Method
- 1
Soak 12 to 16 wooden skewers in water for 30 minutes so they do not burn.
30 min - 2
Mix the ginger garlic paste (see the base recipe), coconut milk, turmeric, coriander, sugar, fish sauce and oil in a bowl. Add the pork, turn to coat and marinate in the fridge for at least 2 hours, or overnight.
- 3
Thread the pork onto the skewers in a ribbon shape, pushing the strips together.
- 4
Heat a griddle pan or barbecue to hot. Cook the skewers for 3 to 4 minutes on each side, until charred at the edges and cooked through with no pink.
7 min - 5
Warm your ready made satay sauce (see the base recipe) in a small pan with a splash of water until steaming hot.
- 6
Serve the skewers hot with the satay sauce for dipping, and the cucumber and red onion on the side.
Tips
- Slice the pork across the grain in strips about 1 cm thick for tender skewers.
- Marinate for at least 2 hours. The turmeric and coconut milk add flavour and keep the meat juicy.
- Never reuse marinade as a sauce unless boiled for several minutes. Use the satay sauce for dipping instead.
Storing and freezing
Keep cooked skewers for 2 days in the fridge, cooled within 1 to 2 hours. Reheat until steaming all the way through. Uncooked marinated pork can be frozen for up to 2 months.
Questions
Can I use chicken or beef?
Yes. Chicken thigh cooks in the same 8 minutes. Beef sirloin needs 2 to 3 minutes per side. Keep the marinade the same.
Is it gluten free and dairy free?
Yes, with gluten free fish sauce and gluten free satay sauce. The sauce is made with coconut milk, so there is no dairy. It does contain peanuts.
Can I cook these in the oven?
Yes. Bake on a rack at 220C (200C fan) for 15 minutes, turning once, then grill for 2 minutes to char the edges.
