Method

  1. 1

Heat the oven to its highest setting, around 250°C (230°C fan), with a baking tray inside to heat.

  2. 2

Heat the oil in a pan and fry your ready made Thai green curry paste (see the base recipe) for 1 minute. Add the coconut milk and simmer for 5 minutes until thick. Cool slightly.

    6 min
  3. 3

Stir the chicken into the sauce for 2 minutes to coat it, then take off the heat.

  4. 4

Divide your ready made pizza dough (see the base recipe) into 2 and stretch each into a 28 cm round on baking paper.

  5. 5

Spread the curry sauce and chicken over the bases. Top with onion and mozzarella.

  6. 6

Slide onto the hot tray and bake for 10 to 12 minutes, until the crust is golden and the chicken is cooked through with no pink.

    11 min
  7. 7

Top with chilli, coriander and lime wedges.

Tips

  • Do not overload the pizza or the chicken will not cook through.
  • Pre-cooking the sauce stops raw garlic in the paste burning.
  • Use a pizza stone if you have one.

Storing and freezing

Eat the same day. Cool leftovers within 2 hours, keep in the fridge for up to 2 days and reheat until steaming hot all the way through.

Questions

Is this gluten free?

No, pizza dough contains wheat. Use gluten free pizza dough to make it so.

Can I skip the cheese?

Yes. Use dairy free cheese or leave it off, as the coconut sauce is creamy already.

Can I use leftover curry?

Yes, spread thick leftover green curry on the base and top with cheese.
