Method
- 1
Mix both flours, the yeast and salt in a large bowl. Stir the treacle into the warm water until dissolved, then add it to the bowl with the oil. Mix to a soft, slightly tacky dough.
- 2
Knead for 10 minutes. Wholemeal dough feels stickier than white, so wait at least 5 minutes before you add any more flour.
10 min - 3
Cover and leave in a warm place for 1 hour 15 minutes, until doubled.
75 min - 4
Oil a 900 g (2 lb) loaf tin. Knock the air out of the dough, pat it into a rectangle the width of the tin and roll it up tightly. Drop it into the tin seam side down.
- 5
Cover loosely and leave for 40 minutes, until the dough domes about 2 cm above the rim. Brush the top with water and sprinkle over the oats.
40 min - 6
Heat the oven to 200°C (180°C fan) and bake for 35 minutes, until deep brown. The loaf should sound hollow when you tip it out and tap the base.
35 min - 7
Cool on a wire rack for at least 1 hour before slicing, so the crumb sets and cuts cleanly.
