Method

  1. 1

Coat the chicken in 120 ml of your ready made pollo asado marinade (see the base recipe). Chill for 1 to 4 hours.

    60 min
  2. 2

Cook the chicken in a hot griddle pan for 6 to 7 minutes per side until charred and cooked through, at 75C in the thickest part. Rest, then chop small.

    13 min
  3. 3

Heat the oven to 200°C (180°C fan). Spread the totopos (see the base recipe for tostadas and totopos) on a large tray in a single overlapping layer.

  4. 4

Scatter the chicken and black beans over the chips. Bake for 5 minutes, just to heat everything through.

    5 min
  5. 5

Gently warm your ready made queso (see the base recipe) in a pan until pourable and hot. Drizzle it all over the nachos.

  6. 6

Top with tomato, jalapenos, coriander and lime juice, and serve right away.

Tips

  • Layer the chips thinly, not in a deep pile, so the toppings reach every chip.
  • Add the queso and fresh toppings after baking, so the chips stay crisp and the tomato stays fresh.
  • Serve with extra salsa and soured cream for dipping.

Storing and freezing

Best eaten fresh. Keep leftover chicken in the fridge for up to 3 days. Assembled nachos do not store well.

Questions

Can I make nachos dairy free?

Not with this queso. Use a dairy free cheese sauce and leave out the soured cream, or top with guacamole.

Can I bake the queso on instead?

Yes, but pour queso on only at the end. Baking it on makes the chips soggy and it can separate.

Can I use shop bought tortilla chips?

Yes. Choose thick, sturdy chips that will not snap under the weight, and check the label for gluten free.
