Method

  1. 1

Heat the oven to 220°C (200°C fan). Toss the cauliflower with the oil and your ready made al pastor marinade (see the base recipe) until every piece is coated.

  2. 2

Spread the cauliflower on a large baking tray in one layer. Roast for 20 minutes, turning once.

  3. 3

Scatter the pineapple over the tray and roast for 8 to 10 minutes more, until the cauliflower has charred edges and the pineapple is caramelised.

    9 min
  4. 4

Warm the tostadas (see the tostadas and totopos base recipe) in the oven for the last 3 minutes.

    3 min
  5. 5

Spoon the cauliflower and pineapple onto the tostadas. Add a spoonful of salsa verde (see the base recipe), the onion and coriander, and serve with lime wedges.

Tips

  • Cut the florets small so they char and cook through in the same time. Use a large tray so they roast instead of steaming.
  • Roasting the pineapple alongside gives it the browned edges that spit-roasted pineapple gets on a trompo.
  • The marinade is thick. Toss with your hands to get into every crevice.
  • Add chopped chipotle if you want a smokier, hotter finish.

Storing and freezing

Cool within 1 to 2 hours and keep the cooked cauliflower in the fridge for up to 3 days. Reheat in a hot oven until steaming hot all the way through. Assemble on fresh tostadas only when serving.

Questions

What is al pastor?

Al pastor is Mexico City style marinated pork, cooked on a vertical spit and served with pineapple. The marinade of dried chillies, achiote and pineapple is easy to use on vegetables too.

Will cauliflower go soggy?

Not if you roast it on a large tray at a high heat. Crowding the tray causes steaming, so use two trays if needed.

Is it vegan?

Yes. The cauliflower, marinade, salsa verde and corn tostadas are all plant based. Always check the label on bought tostadas.
