Method
- 1
Heat the oven to 160°C (140°C fan). Put the beef and salt in a casserole with 400 ml of your ready made birria adobo and consomme (see the base recipe) and the water. Cover and cook for 2 hours 30 minutes until the beef shreds.
150 min - 2
Shred the beef and moisten with 4 tablespoons of the broth.
- 3
Heat the oven to 200°C (180°C fan). Spread the totopos over a large baking tray and warm for 5 minutes until hot and crisp.
5 min - 4
Warm your ready made queso dip (see the base recipe) in a pan until steaming hot all the way through.
- 5
Pile the totopos on a large platter, scatter over the beef, pour on the queso dip and top with pickled onions, jalapeno and coriander. Serve straight away with lime wedges and a bowl of hot broth.
Tips
- Warm the chips first so they stay crisp under the toppings.
- Spoon the dip over just before serving.
- Build the nachos in two layers so the toppings reach every chip.
- Sweet pickled red onions and a squeeze of lime cut through the richness.
Storing and freezing
Nachos do not keep once assembled. Keep the beef in the fridge for up to 3 days and the dip for up to 3 days. Reheat both until steaming hot all the way through.
Questions
Can I use shop bought tortilla chips?
Yes. Use plain, lightly salted corn tortilla chips. Check the label if you need a gluten free option, because some flavoured ones contain wheat.
Are these spicy?
They are mild to medium. The birria has a mild chilli heat. The jalapeno adds a fresh bite that you can leave out.
Can I use leftover birria?
Yes. Use 350 g of shredded cooked birria beef and skip the braising.
