    105 min
  3. 3

Add the carrots and cook for 15 minutes, then add the chickpeas and courgette and cook for a further 10 minutes until all the vegetables are tender.

    25 min
  4. 4

Skim off any excess fat and taste, adding salt or a squeeze of lime if needed.

  5. 5

Ladle into bowls and top with the chopped onion, coriander and a lime wedge for squeezing over.

Tips

  • Beef shin gives a rich, slightly sticky broth. Brisket or chuck work too but need a bit less time.
  • Add the courgette late so it keeps some bite.
  • A spoonful of salsa taquera or chopped fresh chilli makes a hotter bowl.
  • The soup thickens as it sits. Add a splash of water when reheating.

Storing and freezing

Cool within 1 to 2 hours and keep in the fridge for up to 3 days. Freeze for up to 3 months. Reheat until it boils and is steaming hot all the way through.

Questions

Is this a soup or a drink?

It is a soup here, with beef and vegetables. In Mexico, plain birria consomme is also served in small cups to sip or dip tacos into.

Can I use canned chickpeas?

Yes. Drain and rinse tinned chickpeas well. They are already cooked, so add them near the end.

Can I add rice or potatoes?

Yes. Add 100 g cooked rice at the end or 2 diced potatoes with the carrots. Cool any rice quickly if you keep leftovers.
