Method
- 1
Char the poblanos under a hot grill or over a gas flame for 8 to 10 minutes, turning, until blackened. Wrap in a bowl with cling film for 10 minutes, then peel off the skin and cut into strips.
10 min - 2
Heat the oil in a frying pan over a medium heat. Cook the onion for 5 minutes, add the garlic and poblano strips for 2 minutes, then the prawns for 3 to 4 minutes until pink and cooked through. Squeeze in the lime juice.
7 min - 3
Warm your ready made corn tortillas (see the base recipe) in a dry pan for 30 seconds each side.
- 4
Fill half of each tortilla with the cheese and prawn mixture, fold over and cook in the pan for 2 minutes per side until the cheese melts and the edges crisp.
4 min - 5
Serve hot with your creamy jalapeno cilantro sauce (see the base recipe) for drizzling.
Tips
- Pat the prawns dry so they fry rather than steam.
- Use Oaxaca cheese or low moisture mozzarella; wet cheese makes soggy tacos.
- No poblanos? Use a roasted green pepper plus a pinch of chilli flakes.
Storing and freezing
Eat straight away. Cooked filling keeps 1 day in the fridge; reheat until steaming hot.
Questions
Are these gluten free?
Yes, provided the corn tortillas are 100 percent corn. Always check the label.
Can I use cooked prawns?
Yes, add them in the last minute just to warm through.
Are the tacos spicy?
Mild. The poblanos add flavour not heat, and the sauce adds a fresh, gentle heat.
