Method

  1. 1

Heat the oven to 200°C (180°C fan). Score the cut side of each aubergine half in a deep diamond pattern, cutting almost to the skin but not through it.

  2. 2

Mix 80 g of your ready made guajillo adobo paste (see the base recipe) with the oil, salt and 2 tablespoons of water. Spread it over the cut sides, working it into the cuts.

  3. 3

Lay the aubergines cut side up on a baking tray. Roast for 40 minutes until completely soft and the edges are dark and sticky.

  4. 4

Scatter the pumpkin seeds on the tray for the last 5 minutes.

  5. 5

Stir the lime juice into the coconut yoghurt with a pinch of salt.

  6. 6

Top each aubergine half with your ready made pico de gallo (see the base recipe), a spoonful of the lime yoghurt and the toasted seeds.

Tips

  • Deep scoring lets the marinade soak into the flesh and helps the aubergine cook evenly.
  • Do not salt the aubergines beforehand. Modern varieties are rarely bitter and salting is not needed.
  • Serve with rice or warm corn tortillas for a full meal.
  • Roast cut side up so the marinade stays on the surface and caramelises.

Storing and freezing

Keep leftovers in the fridge for up to 3 days and reheat until steaming hot all the way through. The pico de gallo is best fresh, so add it just before serving.

Questions

Can I cook these on a barbecue?

Yes. Cook cut side down over medium heat for 10 minutes, turn, spoon on the adobo and cook covered for 15 to 20 minutes until soft.

What can I use instead of coconut yoghurt?

Any plain yoghurt works if you do not need dairy free. For a vegan option, a plain soya yoghurt mixed with lime juice is a good swap.

Is this dish gluten free and vegan?

Yes. It contains no gluten, dairy, egg or nuts. Coconut yoghurt and pumpkin seeds are plant based.
