Method
- 1
Heat the 1 tbsp oil in a large frying pan over a high heat. Brown the turkey mince for 6 minutes, breaking it up, until no pink is left.
6 min - 2
Stir in the taco seasoning mix and 120 ml water. Simmer for 5 minutes until thick, then leave to cool for 10 minutes.
5 min - 3
Whisk the juice of 2 limes with the 3 tbsp oil and a pinch of salt in a small jar or bowl to make the dressing.
- 4
Toss the lettuce, black beans and sweetcorn together in a large bowl with half the dressing.
- 5
Divide the salad between four wide bowls. Top with the warm turkey, your ready made pico de gallo (see the base recipe) and the avocado. Tuck in pieces of tostada around the edges, drizzle over the remaining dressing and serve straight away.
Tips
- Add the tostada pieces last. They go soft fast once dressed.
- Let the turkey cool for 10 minutes so it does not wilt the lettuce.
- Use ripe but firm avocados and cut them just before serving, with a squeeze of lime to keep them green.
- Add pickled jalapeños or a spoonful of salsa taquera for extra heat.
Storing and freezing
Best eaten fresh. Keep the cooked turkey in the fridge for up to 3 days and the dressed salad does not keep. Store the pico de gallo in a covered pot for up to 2 days.
Questions
Is this taco salad gluten free and dairy free?
Yes. Turkey, beans, sweetcorn, avocado, lime and olive oil contain no gluten or dairy. Use gluten free tostadas and check your seasoning and tinned beans labels.
Can I use beef or chicken instead?
Yes. Use 500 g of beef mince or chopped cooked chicken in the same way. Beef takes slightly longer to brown.
Can I prepare it ahead?
Yes. Cook the meat, chop the vegetables and make the dressing up to a day ahead and keep them apart. Assemble just before serving.
