Method

  1. 1

Heat 200°C (180°C fan). Toss the potatoes, onion, garlic, oil and a good pinch of salt in a large baking dish. Roast for 20 minutes until the potatoes begin to soften.

    20 min
  2. 2

Warm your ready made red enchilada sauce (see the base recipe) and stir 150 ml through the potatoes.

  3. 3

Season the fish with salt and nestle it on top of the potatoes. Spoon the remaining 200 ml sauce over the fish.

  4. 4

Bake for 12 to 15 minutes until the fish is opaque and flakes easily and the potatoes are tender.

    13 min 30 s
  5. 5

Scatter over the pickled red onions and coriander and serve with the lime wedges.

Tips

  • Slice the potatoes thinly and evenly so they cook through in the time the fish needs.
  • Check the fish at 12 minutes. Thinner fillets need less time.
  • The sharp pickled onions cut through the rich sauce, so do not skip them.
  • Use sea bass or bream fillets in place of cod if you like.

Storing and freezing

Cool within 1 hour and keep in the fridge for up to 1 day. Reheat until steaming hot all the way through. Not suitable for freezing.

Questions

Can I use frozen fish?

Yes. Defrost it fully in the fridge overnight and pat dry before seasoning. Frozen fish can release extra water, so drain the dish before serving if needed.

Can I swap the potatoes?

Sweet potato slices work and need the same time. For a lower starch dish use thick courgette slices and add them with the fish.

Is the sauce hot?

It is mild to medium and fruity, not fiery. Serve extra chilli at the table.

What goes well with it?

A green salad and warm corn tortillas. A spoonful of crema is lovely if you do not need it dairy free.
