Method

  1. 1

Warm your ready made barbacoa beef (see the base recipe) in a pan until steaming hot all the way through, and drain off some of the juices.

    4 min
  2. 2

Toss the cabbage with the lime juice and a pinch of salt in a bowl. Leave for 5 minutes to soften slightly.

    5 min
  3. 3

Warm the tostadas in a dry pan or a low oven for 2 minutes if they have gone soft, so they are crisp again.

  4. 4

Spread each tostada with a spoonful of your ready made creamy avocado salsa (see the base recipe). Pile on the barbacoa.

  5. 5

Top with the lime cabbage, radish and crumbled cheese, and drizzle over the soured cream. Scatter with coriander and eat straight away, as tostadas soften quickly.

Tips

  • Assemble at the table if you can. Tostadas stay crisp for only a few minutes once topped.
  • Spread the salsa straight onto the tostada first. It makes a barrier that protects the crunch from the beef juices.
  • Drain the barbacoa well. The juices are better served in a small cup on the side.

Storing and freezing

Keep the components separately in the fridge for up to 3 days. Do not assemble ahead as the tostadas turn soft.

Questions

What are tostadas?

Tostadas are corn tortillas that have been fried or baked until crisp and flat. They are used as an edible plate for toppings such as beans, meat, seafood and salsa.

Can I make tostadas at home?

Yes. Brush corn tortillas with oil and bake at 200C for about 8 minutes, turning once, until crisp and golden. See the tostadas base recipe for details.

Is it dairy free?

Not as written. Leave out the queso fresco and soured cream and add extra avocado salsa for a dairy free version.
