    1 min
  4. 4

Lift out with tongs, drain briefly on kitchen paper and, while still hot, press into the cinnamon sugar on both sides.

  5. 5

Serve straight away, whole or broken into pieces, with fruit, chocolate sauce or a hot drink.

Tips

  • Work in batches and keep the oil at 175C so the buñuelos crisp without soaking up oil.
  • Sugar sticks best while the discs are still hot and slightly oily.
  • Cut into wedges for easier eating and more crunch.
  • Use baking paper under a cooling rack so sugar mess is easy to clear up.

Storing and freezing

Best eaten fresh. Cool completely and keep in an airtight tin for 1 day; they soften with time and can be crisped in a hot oven for 3 minutes.

Questions

Are these traditional buñuelos?

Traditional Mexican buñuelos are large, thin fried wheat pastries. Fried flour tortilla discs are a quick everyday version of the same idea.

Can I bake them?

Yes. Brush with oil, cut into wedges, bake in a hot oven for 6 to 8 minutes until crisp and toss in the cinnamon sugar. They will be less puffy.

Is it vegan?

Yes. The flour tortillas in the base recipe are vegan and so are the oil, sugar and cinnamon. Use sugar that is labelled vegan if this matters to you.
