Method

  1. 1

Pat the tuna dry and season with salt. Heat the oil in a frying pan over a high heat until smoking. Sear the steaks for 1 minute per side so they stay rare in the middle, then rest for 2 minutes and slice thinly.

  2. 2

Toss the avocado slices with the lime juice.

  3. 3

Take your ready made tostadas (see the base recipe) and spread each with about a tablespoon of your creamy jalapeno cilantro sauce (see the base recipe).

  4. 4

Top with avocado, then slices of tuna and radish.

  5. 5

Scatter with sesame seeds and coriander and serve right away so the tostadas stay crisp.

Tips

  • Buy tuna labelled suitable to eat rare or very fresh; sear hard and fast so the centre stays soft.
  • Assemble at the table or right before serving, or the tostadas go soggy.
  • For fully cooked tuna, sear 3 minutes per side instead.

Storing and freezing

Best eaten immediately. Keep cooked tuna 1 day in the fridge; do not store assembled tostadas.

Questions

Can I use cooked tuna?

Yes, cook the steaks through (3 minutes per side) or use flaked tinned tuna in water, drained. It is a different but still tasty dish.

Is this gluten free?

Yes, provided the tostadas are made from corn only and your sesame seeds are plain. Always check packaging.

Should pregnant women eat rare tuna?

Rare tuna is not recommended in pregnancy; cook it through and note UK guidance on tuna intake.
