Method

  1. 1

Warm your ready made pot beans (see the base recipe) in a small pan with a splash of broth, mashing to a thick spreadable paste, until steaming hot all the way through.

  2. 2

Warm your shredded chicken (see the base recipe) in a pan or microwave until steaming hot all the way through.

  3. 3

Lay the tostadas (see the base recipe) on plates. Spread each with a layer of beans, right to the edge, so they stay crisp.

  4. 4

Top with chicken, a handful of lettuce, tomato slices, avocado and onion.

  5. 5

Finish with a drizzle of soured cream and a sprinkle of crumbled feta. Serve straight away with lime wedges.

Tips

  • Spread the beans right to the edge. They act as a seal that stops the toppings soaking into the tostada.
  • Assemble just before eating. Once loaded, tostadas soften within minutes.
  • Add a spoonful of salsa verde or pickled jalapeños for extra kick.

Storing and freezing

Store the toppings separately in the fridge for up to 2 days and assemble fresh. Do not store assembled tostadas.

Questions

What does compuestas mean?

Compuesta means composed or assembled. A tostada compuesta is a crisp tortilla built up with layers of beans, meat, lettuce, tomato, cream and cheese.

Can I use tinned beans and cooked chicken?

Yes. Mash a tin of drained pinto beans with a little water, and use cooked leftover roast chicken, shredded, in place of the base.

Are tostadas gluten free?

Yes, when made from pure corn tortillas. Check the label on bought tostadas, as some brands contain wheat.
