  2. 2

Heat the oil in a frying pan over a medium heat and add your ready made shredded chicken (see the base recipe). Fry for 4 to 5 minutes until hot through and the edges just start to catch.

  3. 3

Split the rolls and toast them cut side down in a dry pan or under the grill for 1 to 2 minutes until crisp.

    1 min 30 s
  4. 4

Spread the bottom halves with the warm beans. Pile on the chicken and scatter over the cheese. Put under a hot grill for 2 minutes until the cheese melts.

    2 min
  5. 5

Spread the top halves with your ready made classic guacamole (see the base recipe). Add the tomato, onion and pickled jalapeños to the chicken, close the tortas and press down firmly.

  6. 6

Cut in half and eat while warm.

Tips

  • Look for soft white rolls with a thin crisp crust. Bolillo or telera are traditional, ciabatta rolls are the best UK stand in.
  • Put the beans on the bread first. They stop the chicken juices soaking into the roll.
  • For more heat add a spoonful of your favourite salsa on top of the chicken.

Storing and freezing

Best eaten straight away. Keep spare filling in the fridge for up to 3 days and reheat the chicken and beans until steaming hot all the way through.

Questions

What is a torta?

A torta is a Mexican sandwich served on a crusty roll, usually with beans, meat, cheese, avocado and pickled chillies. It is a popular street food and lunch.

Can I make a torta gluten free?

Yes, use a gluten free crusty roll. Everything else in the filling is naturally gluten free, but check the label of your pickled jalapeños and the cheese.

Can I use another filling?

Yes. Shredded pork carnitas or barbacoa beef both work well. Keep the beans, cheese and guacamole the same.
