Method

  1. 1

Mix the beef with the cumin and half a teaspoon of salt. Shape into four patties about 2 cm thick and press a dimple in the middle of each. Chill for 15 minutes.

  2. 2

Heat half of the oil in a frying pan and cook the poblano strips and onion for 8 minutes until charred and soft. Keep warm.

  3. 3

Heat a griddle or frying pan until very hot and brush with the remaining oil. Cook the burgers for 4 to 5 minutes each side until browned and cooked through with no pink inside and juices running clear.

  4. 4

Warm your ready made queso (see the base recipe) gently in a small pan over a low heat, stirring, until steaming. Add a splash of milk if it has thickened. Do not let it boil.

  5. 5

Toast the buns. Put a lettuce leaf on each base, then a burger, a pile of peppers and onion and a generous spoon of queso.

  6. 6

Top with your ready made guacamole (see the base recipe), add the bun lid and serve at once.

Tips

  • Handle the mince lightly. Overworked patties turn dense.
  • Always cook burgers all the way through, to 70 degrees C or until no pink remains.
  • Toast the buns in the beef pan to soak up the flavour.

Storing and freezing

Best eaten at once. Keep leftover cooked patties in the fridge for up to 2 days and reheat until steaming hot all the way through.

Questions

Can I use chicken or turkey mince?

Yes. Cook the patties for a little longer until the middle is hot and no pink remains.

Can I make it gluten free?

Yes. Use gluten free buns, or serve in a lettuce wrap, and check the other ingredient labels.

What if I cannot find poblanos?

Use green peppers with a sliced jalapeño for extra flavour.
