Method
- 1
Heat the oven to 220°C (200°C fan). Lay the tortillas on two baking trays and bake for 4 to 5 minutes until crisp at the edges and firm, like a thin cracker.
5 min - 2
Meanwhile, heat the oil in a frying pan and fry your ready made Mexican chorizo (see the base recipe) for 8 to 10 minutes until cooked through with no pink left.
9 min - 3
Warm your ready made refried beans (see the base recipe) with a splash of water until spreadable.
- 4
Spread the beans over the crisp tortillas, leaving a 2 cm border. Scatter over the cheese and chorizo.
- 5
Return to the oven for 3 to 4 minutes until the cheese melts.
3 min 30 s - 6
Top with cabbage, tomato, onion and spoonfuls of your ready made classic guacamole (see the base recipe). Serve flat, or folded in half.
Tips
- A real tlayuda is a huge, thin, toasted corn tortilla. Large flour wraps are the practical UK stand in; bake them until properly crisp.
- Spread the beans while the base is warm and still flexible, and do not add wet toppings until the end.
- Add sliced avocado, pickled jalapeños or a spoonful of salsa to taste.
Storing and freezing
Best eaten straight away. Keep chorizo and beans separately in the fridge for 3 days and reheat until steaming hot before building a fresh tlayuda.
