Method

  1. 1

Heat the oil in a wide, deep frying pan with a lid over a medium heat. Cook the onion for 5 minutes, then the garlic for 30 seconds.

    5 min 30 s
  2. 2

Add the tomatoes, your ready made chipotle adobo sauce (see the base recipe), the salt and 100 ml of water. Simmer for 10 minutes until thick.

    10 min
  3. 3

Meanwhile warm your ready made refried beans (see the base recipe) in a small pan, stirring, until steaming hot. Warm your ready made corn tortillas (see the base recipe) in a dry pan.

  4. 4

Make 8 hollows in the sauce with the back of a spoon and crack an egg into each. Cover and cook gently for 4 to 5 minutes until the whites are set and the yolks are as runny as you like.

    4 min 30 s
  5. 5

Spoon the beans onto plates and add the eggs with sauce.

  6. 6

Sprinkle with coriander and serve with the tortillas and lime wedges.

Tips

  • Keep the heat low once the eggs go in. A rolling boil toughens the whites and breaks the yolks.
  • Crack each egg into a cup first so you can slide it gently into the sauce.
  • If you like firm yolks, cook for 7 to 8 minutes with the lid on.

Storing and freezing

Eat straight away. The sauce alone keeps in the fridge for 3 days or freezes for 2 months, so poach fresh eggs when you reheat it.

Questions

Can I use fewer eggs?

Yes. Allow 2 eggs per person for a hearty brunch, or 1 egg per person with beans and tortillas.

What does ahogados mean?

Ahogados means drowned. The eggs are cooked in a pool of sauce, so they are literally drowned in it.

Is this suitable for children?

Yes, but reduce the chipotle to 40 ml and add a squeeze of lime to keep the sauce mild.
