Method

  1. 1

Make your ready made tikka marinade first (see the base recipe). Wrap the tofu in a clean tea towel, press under a heavy pan for 20 minutes, then cut into cubes.

  2. 2

Gently stir the tofu through 150 g of the marinade. Cover and chill for at least 2 hours, or overnight.

  3. 3

Soak 8 wooden skewers in water for 20 minutes. Thread on the tofu, peppers and onion in turn.

  4. 4

Heat the oil in a griddle pan or the grill to high. Cook the skewers for 10 to 12 minutes, turning, until charred and golden on all sides.

    11 min
  5. 5

Mix the Greek yoghurt, mint and a pinch of salt for the dip.

  6. 6

Serve the skewers hot with the dip and lime wedges.

Tips

  • Pressing the tofu gets rid of water so the marinade clings and the tofu chars properly.
  • Handle gently when turning. Tofu breaks easily.
  • Extra firm tofu holds up best on skewers.

Storing and freezing

Keeps in the fridge for up to 3 days once cooled within 1 to 2 hours. Eat cold in salads or reheat until steaming hot all the way through.

Questions

Is this vegan?

Only if you use the coconut yoghurt version of the tikka marinade and swap the Greek yoghurt for coconut yoghurt in the dip.

Can I bake instead?

Yes. Roast on a lined tray at 220C for 25 to 30 minutes, turning halfway, until golden and charred at the edges.

Can I use paneer instead of tofu?

Yes. Paneer is softer and richer, and cooks in about 8 minutes on the grill.
