Method
- 1
Make your ready made tikka marinade first (see the base recipe). Rub the lamb chops all over with 150 g of the marinade. Cover and chill for at least 4 hours, or overnight.
- 2
Take the chops out of the fridge 30 minutes before cooking. Heat a griddle pan or grill to very hot.
30 min - 3
Mix the Greek yoghurt with the mint, lemon juice and a pinch of salt for the mint yoghurt.
- 4
Wipe a little excess marinade from the chops, brush with oil and cook for 3 to 4 minutes per side for pink, or a little longer for well done, until the outside is charred.
8 min - 5
Rest the chops on a warm plate for 5 minutes.
- 6
Serve with the mint yoghurt, red onion slices and lemon wedges.
Tips
- Lamb takes a long marinade well. Overnight gives the deepest flavour.
- Use a very hot pan so the fat renders and crisps.
- Always rest the meat after cooking so the juices settle.
Storing and freezing
Keeps in the fridge for up to 3 days once cooled within 1 to 2 hours. Reheat until steaming hot all the way through, or eat cold in salads.
Questions
Can I cook the lamb in the oven instead?
Yes. Roast on a rack at 220C for 12 to 15 minutes, turning once, then finish under a hot grill for 2 minutes to char. Rest before serving.
How pink can lamb chops be?
Lamb chops can be served pink in the middle if they are whole cuts with the surface well seared. Cook minced or rolled lamb all the way through instead.
Can I use lamb leg steaks?
Yes. Leg steaks are leaner, so marinate overnight and cook for 4 to 5 minutes per side without overcooking.
