Method

  1. 1

Heat the oil in a large pan over a medium heat. Fry the garlic for 30 seconds, then add the prawns and tofu and cook for 3 minutes until the prawns turn pink.

  2. 2

Add the mooli, carrot, hoisin, soy sauce, water and white pepper. Cover and cook gently for 20 minutes, stirring now and then, until the mooli is soft and sweet.

    20 min
  3. 3

Uncover and cook for 5 minutes more until the liquid has almost gone. Tip into a colander over a bowl to drain and cool.

    5 min
  4. 4

Make a thin omelette: pour the beaten eggs into a lightly oiled non stick pan, cook for 1 minute each side, then slice into ribbons.

  5. 5

Warm the skins briefly in a dry pan or microwave so they are pliable.

  6. 6

Lay a skin flat. Spread with hoisin, add a lettuce leaf, a spoonful of filling, some egg, beansprouts, peanuts and a drizzle of sweet chilli.

  7. 7

Fold in the sides and roll up snugly. Cut in half and eat straight away.
