Heat the oven to 220°C (200°C fan) and line two large baking trays with baking paper.

  2. 2

Mix the shredded chicken, taco seasoning mix, lime juice and 3 tbsp water in a bowl. Use your ready made pollo deshebrado (see the base recipe), which should be cold or at room temperature. Stir in the cheese.

  3. 3

Warm the corn tortillas in a dry frying pan for 20 seconds each side, or microwave them wrapped in damp kitchen paper for 30 seconds, until soft and pliable.

  4. 4

Spoon about 2 tbsp of filling in a line along one edge of each tortilla. Roll up tightly and place seam side down on the trays, leaving a little space between each.

  5. 5

Brush the taquitos all over with the olive oil. Bake for 15 minutes, turning once, until crisp and golden. Serve hot with the salsa and soured cream.

Tips

  • Warm the tortillas properly. Cold corn tortillas crack as soon as you roll them.
  • Keep the filling fairly dry. Pat the shredded chicken with kitchen paper if it was stored in broth.
  • Place the taquitos seam side down on the tray so they stay rolled as they bake.
  • An air fryer at 190C for 8 minutes gives a very good crunch.

Storing and freezing

Keeps in the fridge for up to 3 days once cooled within 1 to 2 hours. Freeze unbaked taquitos on a tray, then bag for up to 2 months and bake from frozen for 20 minutes until steaming hot all the way through.

Questions

What is the difference between taquitos and flautas?

They are the same idea, a rolled, fried tortilla with filling. Taquitos are usually smaller and made with corn, while flautas are longer and often use flour tortillas or two corn tortillas overlapped.

Are baked taquitos gluten free?

Yes, if you use corn tortillas that are gluten free, plain shredded chicken and cheese. Check the label on your salsa and taco seasoning.

Can I fry them instead?

Yes. Shallow fry seam side down in 2 cm of hot oil for 2 minutes per side until golden, then drain on kitchen paper. They are crisper but oilier than baked.
