Method

  1. 1

Warm your ready made refried beans (see the base recipe) in a small pan with the water, stirring, for 3 to 4 minutes until steaming hot all the way through. Keep warm.

  2. 2

Heat the oil in a large frying pan over a high heat. Fry the mushrooms in two batches for 5 to 6 minutes each, without moving them too much, until deep golden.

  3. 3

Return all the mushrooms to the pan. Add the garlic, guajillo rings, oregano and salt and cook for 1 minute, until fragrant. Do not let the garlic burn.

    1 min
  4. 4

Take off the heat and stir in the lime juice.

  5. 5

Warm the tostadas (see the tostadas and totopos base recipe) in a 160°C (140°C fan) oven for 3 minutes if they have lost their snap. Spread each with beans, pile on the mushrooms, and finish with pico de gallo (see the base recipe). Serve straight away.

Tips

  • Cook the mushrooms in batches in a hot pan so they brown instead of boiling in their own liquid.
  • Slice the guajillo into thin rings with scissors. They add a mild, fruity heat and crisp slightly in the oil.
  • Add the garlic last. It burns quickly and turns bitter.
  • Use oyster or king oyster mushrooms for a meatier bite.

Storing and freezing

Eat straight away. Keep the cooked mushrooms in the fridge for up to 3 days, cooled within 1 to 2 hours, and reheat until steaming hot all the way through. Do not store assembled tostadas.

Questions

What does al ajillo mean?

Al ajillo means cooked with garlic, usually sliced and fried with dried guajillo chilli. It is a fast, savoury Mexican way to cook mushrooms, prawns and chicken.

Can I use other mushrooms?

Yes. Oyster, shiitake or a mix all work. Avoid washing them in water, just wipe them, so they brown properly.

Is this vegan?

Yes, as long as your tostadas are plain corn and gluten free. The beans, mushrooms and pico de gallo are all plant based.
