Method
- 1
Pat the tofu dry. Heat 2 tbsp oil in a large non stick frying pan over a medium high heat and fry the tofu for 6 to 8 minutes until golden on most sides. Lift out.
7 min - 2
Beat the eggs with the salt, tamari and spring onion in a bowl. Add the tofu.
- 3
Heat the remaining oil in the pan over a medium heat. Pour in the egg and tofu mixture and cook for 3 to 4 minutes, until the base is set and golden.
3 min 30 s - 4
Slide the omelette onto a plate, flip it back into the pan and cook for 2 minutes more, until set through.
2 min - 5
Warm your ready made satay sauce (see the base recipe) with a splash of water until steaming hot.
- 6
Cut the omelette into wedges and serve with the satay sauce poured over, with the cucumber, beansprouts and sambal from your base recipe on the side.
Tips
- Fry the tofu until properly golden first, so it stays firm inside the omelette.
- Keep the heat at medium, not high, or the egg browns before the middle sets.
- Dip the wedges into the peanut sauce and add sambal in small amounts.
Storing and freezing
Keep for 1 day in the fridge, cooled within 1 to 2 hours, and reheat until steaming hot all the way through.
Questions
Is this vegan?
No, because it uses egg. For a vegan version make a tofu scramble from 400 g crumbled firm tofu, 1 tsp turmeric and the same seasoning, and serve with the sauce.
Can I use silken tofu?
Firm tofu works best for frying. Silken tofu breaks up too easily, though it makes a softer omelette if you fold it in without frying first.
Is it gluten free?
Yes, with gluten free tamari and gluten free satay sauce. The sauce includes peanuts.
