Method
- 1
Soak 12 wooden skewers in water for 30 minutes.
30 min - 2
Whisk the tamari, maple syrup, oil, garlic and coriander in a large bowl. Add the mushrooms and toss gently. Leave for 15 minutes.
15 min - 3
Thread the mushrooms onto the skewers, halving the chestnut mushrooms.
- 4
Heat a griddle pan or barbecue to hot. Grill the skewers for 4 to 5 minutes on each side, until golden with charred edges and tender.
9 min - 5
Warm your ready made satay sauce (see the base recipe) with a splash of water until steaming hot.
- 6
Brush some sauce over the skewers, then serve with the rest for dipping, with cucumber and lime wedges.
Tips
- Pull king trumpet mushrooms into strips with your fingers rather than cutting. They have a rougher surface that browns well.
- Do not salt the mushrooms for long before grilling, or they release water and steam.
- Do not crowd the griddle. Cook in batches for good colour.
Storing and freezing
Keep cooked skewers for 2 days in the fridge, cooled within 1 to 2 hours, and reheat in a hot oven until steaming hot all the way through.
Questions
Is this vegan?
Yes. The mushrooms, tamari, maple syrup and satay sauce contain no animal products. Check your tamari label if you are strict.
Can I use other mushrooms?
Yes, chestnut or portobello work. Cut them into thick slices so they hold on the skewer. King trumpet gives the meatiest bite.
Can I bake them?
Yes. Roast on a lined tray at 220C (200C fan) for 20 to 25 minutes, turning once, until golden and dry at the edges.
