  2. 2

Warm the tostadas in a low oven at 160°C (140°C fan, gas mark 3) for 3 to 4 minutes so they are crisp.

  3. 3

Mix the lettuce with the remaining lime juice.

  4. 4

Spread a spoonful of soured cream on each tostada. Pile on some chicken, then lettuce.

  5. 5

Top with avocado slices and radish. Spoon over your ready made salsa verde (see the base recipe).

  6. 6

Serve immediately, 3 each, before the tostadas soften.

Tips

  • Assemble just before eating. Tostadas soften in a few minutes under wet toppings.
  • Spread the cream or a smear of beans first. It acts as glue and a moisture barrier.
  • Set out the toppings and let everyone build their own.

Storing and freezing

Eat straight away. Keep the components separate in the fridge for up to 2 days and assemble fresh.

Questions

Can I use bought tostadas?

Yes. Check the label for any added wheat if you need gluten free. Or bake your own from corn tortillas, as in the tostadas base recipe.

Can I make them vegan?

Yes. Swap the chicken for refried beans or black beans, and replace the soured cream with mashed avocado.
