Method

  1. 1

Warm the corn tortillas (see the base recipe) in a dry pan or the microwave for 30 seconds until pliable.

  2. 2

Warm the carnitas (see the base recipe) in a pan until steaming hot all the way through and slightly dry. Cool for a few minutes so you can handle it.

  3. 3

Put 2 tbsp of pork along the edge of a tortilla and roll up as tightly as you can. Secure with a cocktail stick if it springs open.

  4. 4

Heat the oil in a deep frying pan to 180C or until a crumb sizzles at once. Fry 3 or 4 flautas at a time, seam side down first, for 2 to 3 minutes until golden and crisp.

  5. 5

Drain on kitchen paper and remove cocktail sticks.

  6. 6

Serve with the guacamole (see the base recipe), lettuce, radishes and lime wedges.

Tips

  • Roll tightly and fry seam side down first so they hold.
  • Keep the oil at about 180C. Too cool and they soak up oil, too hot and they scorch before crisping.
  • To bake instead, brush with oil and bake at {t220} for 12 to 15 minutes, turning once.

Storing and freezing

Best fresh. Cooked flautas keep in the fridge for 2 days and re-crisp in a hot oven for 10 minutes until steaming hot all the way through.

Questions

What is the difference between flautas and taquitos?

They are essentially the same rolled, fried tortilla. In many places flautas are long, made with corn tortillas, while taquitos are smaller.

Can I freeze flautas?

Yes. Freeze uncooked rolled flautas on a tray, then bag them. Fry or bake from frozen, adding a few minutes.

Can I use flour tortillas?

You can, but corn gives the classic crunch and keeps it gluten free.
