Method
- 1
Heat the oven to 180°C (160°C fan). Line a 20 cm square tin with baking paper.
- 2
Melt the chocolate and butter together in a heatproof bowl over a pan of barely simmering water, stirring until smooth. Cool for 10 minutes.
10 min - 3
Whisk the sugar, eggs and vanilla in a large bowl for 3 minutes until pale and thick.
3 min - 4
Stir in the cooled chocolate mixture and your ready made chipotle adobo sauce (see the base recipe) until smooth.
- 5
Sift in the flour, cocoa, cinnamon and salt. Fold gently until just combined.
- 6
Pour into the tin and bake for 25 to 28 minutes until the top is set and cracked but the middle wobbles slightly. @1620 Cool completely in the tin before cutting into 12 squares.
Tips
- Add chipotle a little at a time the first time you make these. 30 ml gives a warm back of the throat heat, not a hot kick.
- Take the brownies out while the middle is still slightly soft. They firm up as they cool.
- Cool fully before cutting, or the squares will be gooey and messy.
Storing and freezing
Keep in an airtight tin for up to 4 days. Freeze wrapped squares for up to 2 months and thaw at room temperature.
Questions
Will they taste of chilli?
Only faintly. The chipotle gives smoke and a slow warmth that goes well with dark chocolate and cinnamon, but they do not taste hot.
Can I make them gluten free?
Yes. Swap the plain flour for gluten free plain flour and check the chocolate and cocoa labels.
Can I use a different chilli?
A pinch of ground chipotle or smoked paprika works if you have no sauce, but the sauce adds moisture and tang.
