Method

  1. 1

Make your ceviche lime marinade, creamy avocado salsa and tostadas (see the base recipes) beforehand and chill the marinade and salsa.

  2. 2

Cut the tuna into 1 cm cubes and put them in a cold glass bowl. Pour over 150 ml of the ready made ceviche lime marinade and stir gently.

  3. 3

Chill for 8 to 10 minutes, until the outside turns paler but the middle stays pink.

  4. 4

Lift the tuna from the marinade with a slotted spoon and drain well. Toss with the red onion and a pinch of salt.

  5. 5

Spread 2 tbsp of your creamy avocado salsa (see the base recipe) on each tostada, then top with the tuna.

  6. 6

Finish with radish, chilli rings and coriander leaves and serve at once.

Tips

  • Buy tuna labelled sushi grade or suitable for eating raw and keep it very cold until you slice it. Raw tuna should be previously frozen at -20C for at least 24 hours.
  • Marinate the tuna for 8 to 10 minutes only. A pink centre tastes better than a pale one.
  • Build the tostadas right before serving. Wet toppings soften a tostada within a couple of minutes.
  • Radish or cucumber slices give a nice crunch if you want something extra on top.

Storing and freezing

Make these straight away and eat within 30 minutes. They do not keep, so throw away any leftover tuna and marinade.

Questions

Can I use tinned tuna?

Not for this dish, which depends on firm, fresh raw tuna cured in lime. For a cooked version, use flaked seared tuna with a spoonful of marinade instead.

Why is the avocado salsa spread under the tuna?

It makes a barrier that stops lime juice running into the tostada, and the creamy base balances the acid and chilli of the tuna.

Are these gluten free?

Yes, if the tostadas are made only from corn and nothing else has wheat in it. They are also dairy free, egg free and nut free.
