Method
- 1
Heat 1 tbsp oil in a large frying pan over a high heat. Add half the mushrooms in a single layer and cook without stirring for 3 minutes, then turn and cook for 3 minutes more until deep golden. Tip onto a plate and repeat with the rest.
6 min - 2
Add the remaining oil to the pan and cook the onion over a medium heat for 5 minutes until soft. Add the garlic for 30 seconds.
5 min 30 s - 3
Return the mushrooms to the pan. Stir in your ready made chipotle adobo sauce (see the base recipe), 3 tablespoons of water and the salt. Cook for 3 to 4 minutes until the mushrooms are glossy and coated.
3 min 30 s - 4
Squeeze in the lime juice and check the seasoning.
- 5
Warm your ready made corn tortillas (see the base recipe) in a dry pan for 30 seconds on each side.
1 min - 6
Fill with the mushrooms, avocado, your ready made pickled red onions (see the base recipe) and coriander.
Tips
- Cook the mushrooms in batches. A crowded pan steams them and they turn grey and rubbery rather than browned.
- Do not salt the mushrooms until the end, as early salt draws out water and slows the browning.
- A mix of chestnut, oyster and portobello gives the best texture. Oyster mushrooms shred like pulled meat.
Storing and freezing
Keeps in the fridge for up to 3 days and reheats in a hot pan. Assemble the tacos fresh. Freeze the cooked mushroom filling for up to 2 months.
Questions
Which mushrooms are best?
Chestnut mushrooms give the best flavour, oyster mushrooms the most pulled meat texture and portobello a deep, steak like bite. A mix is ideal.
Are these tacos vegan?
Yes. Every ingredient is plant based, including the homemade chipotle sauce, tortillas and pickled onions.
Can I add beans?
Yes. A tin of drained black beans stirred in with the mushrooms makes the filling go further.
