Method

  1. 1

Heat 1 tablespoon of the oil in a large frying pan over a high heat. Fry the mushrooms in two batches for 6 minutes each until deep brown and their liquid has gone. Season with salt.

Add the remaining oil to the pan, then the onion and pepper. Cook for 6 minutes until soft and a little charred.

  3. 3

Return the mushrooms to the pan with the black beans and your ready made chipotle adobo sauce (see the base recipe). Cook for 4 minutes, stirring, until glossy and thick.

    4 min
  4. 4

Warm your homemade flour tortillas (see the base recipe) in a dry pan for 15 seconds a side.

  5. 5

Fill each tortilla with the mushroom mix and sliced avocado, fold in the sides and roll up. Serve with lime and salsa.

Tips

  • Do not crowd the mushrooms. Cook them in batches so they brown instead of steaming.
  • Salt the mushrooms after browning, not before, to avoid a watery pan.
  • Chipotle adobo is hot and smoky. Start with 60 ml and add more to taste.
  • Make the filling the day before. It tastes even better after a night in the fridge.

Storing and freezing

Keep the filling in the fridge for up to 3 days. Assembled burritos wrapped without the avocado freeze for up to 2 months. Reheat until steaming hot all the way through.

Questions

Is this burrito vegan?

Yes. The mushrooms, vegetables, beans, flour tortillas and chipotle adobo sauce used here are all vegan, and the filling contains no dairy or egg.

Can I use other mushrooms?

Yes. Portobello, oyster or button mushrooms all work. Oyster mushrooms give a shredded, meaty feel and brown very well.

How hot is it?

Medium to hot. Chipotle chillies are smoky and warm rather than fiery. Reduce to 60 ml of adobo for a milder burrito.
