Method

  1. 1

Mix the beef with the cumin, salt and 1 tablespoon of your ready made chipotle in adobo sauce (see the base recipe). Shape into 4 patties about 2 cm thick, pressing a dimple in the middle of each. Chill for 15 minutes.

  2. 2

Mix the rest of the chipotle sauce with the soured cream to make the chipotle cream.

  3. 3

Heat the oil in a large frying pan or griddle over a high heat. Cook the burgers for 5 minutes on each side, until deep brown and cooked through with no pink and clear juices. Lay a slice of cheese on each for the last minute.

  4. 4

Warm your ready made refried beans (see the base recipe) in a small pan with the water, stirring, until steaming hot all the way through. Toast the buns, cut side down, in the pan for 1 minute.

  5. 5

Build each burger: bottom bun, lettuce, tomato, burger, a spoonful of beans, guacamole (see the base recipe), jalapeños, chipotle cream and the top bun.

  6. 6

    Serve straight away.

Tips

  • Always cook minced beef burgers right through until there is no pink in the middle.
  • Dimple the centre of each patty so it cooks flat instead of puffing up.
  • Chipotle in adobo is hot. Mix it into the burgers sparingly and balance the rest with cream.
  • Warm the beans so they act as a hot, soft layer. Cold beans make the burger lukewarm.

Storing and freezing

Cooked patties keep for up to 2 days in the fridge after cooling within 1 to 2 hours. Reheat until steaming hot all the way through. Freeze uncooked patties for up to 3 months, separated by baking paper.

Questions

Can I grill the burgers?

Yes. Grill or barbecue over a medium high heat for 5 to 6 minutes per side, until cooked through with no pink. Add the cheese for the last minute to melt.

Are the buns gluten free?

Standard buns are not. Use gluten free buns and check the labels on the chipotle sauce and cheese. The patties are naturally gluten free.

Can I make these ahead?

Shape the patties up to 24 hours ahead and keep covered in the fridge. Cook and assemble just before eating.
