Method

  1. 1

Toss the strawberries with 1 tbsp of the icing sugar and leave for 10 minutes to release their juice.

  2. 2

Whip the cream with the remaining icing sugar and vanilla to soft peaks. Chill. Mix the caster sugar and cinnamon on a plate.

  3. 3

Spoon your ready made churro dough (see the base recipe) into a bag with a large star nozzle. Heat the oil in a deep pan, no more than one third full, to 180 degrees C.

  4. 4

Pipe 12 cm lengths into the oil and snip with oiled scissors. Fry 3 or 4 at a time for 3 to 4 minutes, turning, until deep golden.

    4 min
  5. 5

Drain, roll in the cinnamon sugar and cool for 2 minutes. Split each churro lengthways without cutting through, then fill with cream and strawberries. Serve at once.

Tips

  • Split the churros while warm; they crack if left to go fully cold.
  • Use ripe in-season strawberries; add a squeeze of lime if they are tart or bland.
  • Whip the cream only to soft peaks so it stays spoonable against the warm churros.

Storing and freezing

Eat straight away. Fried churros keep 1 day airtight but filled ones do not; keep cream and strawberries separate in the fridge for 1 day.

Questions

Can I use frozen strawberries?

Yes, thaw and drain them well, then toss with sugar. They are softer but still good.

Is there a dairy free version?

The churro dough is dairy free. Swap the cream for whipped coconut cream chilled overnight and label-check the sugar.

How do I keep the churros crisp?

Fill them only at the last minute and eat immediately.
