Method

  1. 1

Heat the oven to 220°C (200°C fan).

  2. 2

Stir your ready made guajillo adobo paste (see the base recipe) with the oil and water in a large bowl. Add the mushrooms and toss until well coated. Leave for 15 minutes.

  3. 3

Spread the mushrooms on a large baking tray in a single layer. Roast for 20 minutes, turning once, until browned and tender with crisp edges.

  4. 4

Warm your ready made frijoles negros (see the base recipe) and your ready made arroz verde cilantro lime (see the base recipe) in separate pans until steaming hot.

  5. 5

Spoon the rice and beans onto plates, top with the mushrooms and avocado, and finish with coriander and lime wedges.

Tips

  • Do not crowd the tray or the mushrooms will steam instead of roast.
  • Cut mushrooms into big pieces. They shrink a lot in the oven.
  • Adobo is rich and tangy, so the lime at the end balances it.

Storing and freezing

Cool within 1 hour and keep in the fridge for up to 3 days. Reheat until steaming hot all the way through. Reheat rice only once.

Questions

Can I use other mushrooms?

Yes. Oyster, portobello or king oyster work well. Tear oyster mushrooms and roast for 15 minutes.

Is it spicy?

Guajillo adobo is deep and mild to medium. It is more earthy than fiery.

Can I cook it in a pan?

Yes. Fry the coated mushrooms in a large pan in two batches over a high heat for 8 minutes each.
