Method

  1. 1

Mash your ready made pot beans (see the base recipe) to a thick paste and stir in the grated mozzarella.

  2. 2

Warm your corn tortillas (see the base recipe) in a dry pan or microwave for 20 seconds so they are soft and do not crack when rolled.

  3. 3

Put 1 heaped tablespoon of filling along the edge of each tortilla and roll up tightly. Secure with a cocktail stick or lay seam side down.

  4. 4

Heat the oil in a deep frying pan to about 180 C, or until a cube of bread browns in 30 seconds. Fry the flautas in batches, seam side down first, for 2 to 3 minutes, turning, until golden and crisp.

  5. 5

Drain on kitchen paper and remove the cocktail sticks.

  6. 6

Pile the flautas on plates over shredded lettuce, drizzle with soured cream, scatter with feta and coriander, and serve with your ready made avocado salsa (see the base recipe).

Tips

  • Warm the tortillas well. Rolling them cold makes them crack.
  • Do not overfill the flautas, or the filling will burst out in the hot oil.
  • For a lighter version, brush the rolls with oil and bake at 220 C for 15 minutes, turning once.

Storing and freezing

Eat straight away while crisp. Uncooked rolled flautas can be chilled for up to 24 hours. Reheat leftovers in a hot oven until crisp and steaming hot all the way through.

Questions

What is the difference between flautas and taquitos?

They are very similar. Flautas, meaning flutes, are usually made with larger tortillas and longer rolls, taquitos with small ones, but the names are used interchangeably.

Can I bake them instead?

Yes. Brush with oil and bake on a tray at 220 C for 15 to 18 minutes, turning halfway. They will be crisp, but less rich than fried.

Are they gluten free?

Yes, when made with pure corn tortillas and cheese without anti caking wheat starch. Fry in clean oil if anyone has coeliac disease.
